A good Italian carbonara is a simple dish, but difficult to perfect. Carbonara is Signora Sofia's favorite pasta dish, mastered by her dear Nonna. She has many fond memories of it, which is why we protect our recipe to make sure it never changes.
Here at Pizzeria Vecchia, we do not use cream or milk, or any other filler to make our carbonara. We only use true, traditional ingredients — the freshest eggs, chopped pancetta, and aged parmigiano regiano, all tossed with al dente spaghetti.
From the Italian bacon to the delightfully sharp flavor of the cheese, we serve Spaghetti alla Carbonara the way it was meant to be enjoyed. By request, we can add a dash of Pecorino Romano for our Janesville customers who want a little extra cheese on their dish.
